This delicious snack dates back to Middle Age French and Belgian sausage-making traditions, which included more herbal or dairy-laden variations than what we enjoy now. In 1755, Acadians were exiled from Nova Scotia and France, settling in Louisiana’s heartland (their descendants today are called Cajuns). Over time, their French boudin traditions gained a Cajun slant, quickly becoming a spicy hallmark of Louisiana's culinary identity.
